IN THE VINERY – RED WINES

We produce three red wines 100% Pinot Noir and one white wine, a blend of Chardonnay and Pinot Noir. Our property is divided in two vineyards (Fortuni and Coldaia) which have their own character and identity, therefore we harvested, vinify and bottled separately.  Our red wine are FORTUNI, COLDAIA and MCDLXV Selection, the first two are single vineyard wines, but the third one, which means 1465 in roman numerals, and is dedicated to PODERE FORTUNA first proved vintage, is our finest wine and it is produced just in the best vintages from grapes selected from a few parcels of the two vineyards.

When the harvest time finally arrives, the grapes are hand-harvested in small boxes and selected by two different sorting  tables before the vinification in French oak open vats with temperature control. The fermentation is completely natural, entrusted the only indigenous yeasts, and aimed to draw out the characteristics of the terroir and of the vintage. We exclude also any action to change natural acidity and tannins. Then, after about 18 to 25 days of fermentation, according to grapes conditions, the wine is left in Frence oak barriques for the following 12 months. After this period we let the wine settle in cement vats for the following six months just to let the winter frost to clean it and to give us the chance to bottle it without any filtration. In this way we leave in the wine all it need for a great ageing in the bottle.

IN THE WINERY – WHITE WINE

Our white wine is GRETO ALLA MACCHIA and is produced from Chardonnay and Pinot Noir  grapes harvested in GRETO ALLA MACCHIA parcel that is a small part of COLDAIA vineyard. In this wine we blend Pinot Noir (vinified in white) and Chardonnay after fermentation. The grapes are hand-harvested in small boxes and immediately pressed as soon as they arrive in the winery. Than we leave the juice one night in a steel vat for cleaning and deposit and then we put it in French oak barriques for fermentation and 12 month of ageing.  After this period we let the wine settle in cement vats for the following six months just to let the winter frost to clean it and to give us the chance to bottle it with a very light filtration to have a good ageing in the bottle.
